Concept

Expressing the delicateness of Japanese cuisine, while conveying how a single ingredient can transform into as many as 30 different dishes
Four Courses with Different Weekly Themes

Japanese Seasons Course
The four seasons of Japan greatly influence its cuisine. A characteristic feature is that even the same dish changes its color and flavor with each season. In spring, the colors evoke cherry blossoms and fresh greenery; summer features vibrant vegetables and refreshing presentation; autumn brings warm colors reminiscent of autumn leaves; and winter centers around heartwarming hot dishes. By incorporating seasonal ingredients in their prime, the flavor of the dishes is further enhanced, and the beauty of the season is expressed visually. Japanese cuisine values this sense of seasonality, allowing you to experience the four seasons through taste and sight.
