Most people mix wasabi directly into soy sauce. But scientifically speaking, this destroys the flavor!
The signature sharp aroma of wasabi comes from highly volatile compounds (allyl isothiocyanate). When you dissolve it into a pool of soy sauce, those aromatic oils get trapped and oxidized, completely killing the fresh flavor. You should always place a small amount of wasabi directly on the fish.

- Rice: 300g (Warm Japanese short-grain)
- Sushi Vinegar: 2 tbsp
- Sashimi: 200g (Tuna, Salmon, or your favorite fish)
- Nori (Seaweed): 4 sheets
- Wasabi: A pinch
- Soy Sauce: For dipping
- Dashi Stock: 400ml (For the side soup)

2. Prepare the Dashi Soup: Warm your Dashi stock and season it lightly with salt and soy sauce. A high-quality Dashi soup perfectly cleanses your palate between sushi bites!
3. Roll the Sushi: Place a layer of rice on the Nori, add a tiny dab of wasabi, and top with sashimi. Roll it into a cone.
4. The Proper Dip: Dip only the fish part into the soy sauce, not the rice. Eat it in one bite to experience the perfect balance!
