When you hear "Sushi," you might think of a fancy restaurant. But in Japan, our real weekend vibe is all about Omurice and Temaki Sushi! These dishes are simple, but knowing the "Why" behind the steps makes them professional-grade.

The Secret of Perfect Omurice: Caramelize Your Ketchup

  • Most people add ketchup to the rice at the end. Scientifically, that’s a mistake.
  • Heat the ketchup alone in the pan first for about 30 seconds. The heat burns off the harsh acidity and triggers the Maillard reaction, transforming it into a rich, sweet sauce.

The Logic of Sushi Rice: "Cut," Never Mash

  • If you press down on the rice with a spoon, you break the starch on the surface, making it "Chop-chop" (mushy).
  • Use a "cutting" motion with a wooden spatula. This keeps each grain independent and creates a light texture that melts in your mouth.

(3) Ingredients (Serves 2)

  • For Omurice: 300g Warm Rice, 50g Chicken, 1/4 Onion, 4 tbsp Ketchup, 4 Eggs, 1 tbsp Milk.
  • For Temaki Sushi: Sushi Rice (Short-grain), Nori Seaweed, Salmon, Cucumber, Avocado.
  • Dashi Stock: For your side Miso Soup. (Check our Basic Dashi Guide)

(4) Instructions

1. The Ketchup Base: Sauté chicken and onions. Push them to the side and fry the ketchup in the center until it bubbles before mixing it with the rice.

2. The Fluffy Egg: Mix eggs and milk. Pour into a very hot pan and stir vigorously in a circular motion. Stop the heat while the top is still runny (Juku-juku)!

3. Perfect Sushi Rice: Mix vinegar into hot rice. Heat opens up the rice "pores," allowing the flavor to penetrate deeply. Lightly toast the Nori over a gas flame for 2 seconds to make it extra crispy.
