The Science of Natto's "Strings"
Natto is fermented soybean. When you stir it, you are physically breaking protein chains into Glutamic Acid—the essence of Umami. Scientifically, stirring 50+ times before adding sauce creates a better aeration, making the texture fluffier and the taste much richer. Don't just eat the slime; unlock the flavor!

That puckering sourness is Citric Acid. Your body uses this to convert food into energy via the "Citric Acid Cycle." Umeboshi acts like a natural battery, which is why Samurai used it for recovery. It also has natural anti-bacterial properties, making it the perfect companion for rice.

(3) Ingredients (Serves 1)
- Natto: 1 pack (With dashi sauce & mustard)
- Umeboshi: 1 piece (Pitted and mashed into a paste)
- Steamed Rice: 1 bowl (Fresh and warm!)
- Green Onions: 1 tbsp (Chopped)
- Optional: 1 Raw Egg or Toasted Seaweed (Nori)

1. Stir for Umami: Place Natto in a bowl. Stir vigorously 50-100 times until it becomes white and thick. This is the scientific key to a better taste!
2. Create the Fusion: Add the mashed Umeboshi paste and the included sauce. The acid from the plum balances the rich protein of the beans.
3. Use the Heat: Scoop the mixture over warm rice. The warmth (60-70°C) helps to release the healthy fermentation aromas.
4. Garnish: Top with green onions and enjoy your high-energy Japanese breakfast!
