Odor Neutralization in Offal
Offal smells strong because of blood and surface fat. Both come off with one hot bath.
Core Concept
Blood proteins turn to scum when heated. Surface fat carries most of the smell. Boiling for ten minutes lifts both to the top. The offal itself keeps its own good flavor.
Did You Know?
Japanese motsu shops boil, drain, wash, and boil again. Two rounds are standard. The second water stays almost clear.
Why one boil is not enough
The first boil pulls out most of the blood. Scum sticks to the surface as you drain. Washing under running water takes that off.
Aromatics help, but later
Add ginger and green onion to the second boil, not the first. In the first pot they just get thrown away.
