Have you ever made Shogayaki (Ginger Pork) and the meat turned out tough and dry? Don't worry, Katie, it's not your fault! Scientifically speaking, meat proteins contract and lose moisture quickly when exposed to high heat.

My secret trick? Soak the pork in Dashi for 10 minutes before cooking!

Why does this work?

  • Hydration Buffer: The meat fibers absorb the Dashi, acting as a moisture shield against the hot pan.
  • Umami Synergy: The pork absorbs the deep Inosinate (umami) from the fish and seaweed in the Dashi. When combined with the pork's natural flavor, it creates an explosion of taste!

  • Thinly Sliced Pork: 250g (Pork loin or belly)
  • Dashi Stock: 200ml (To marinate the pork)

  • Fresh Ginger: 1 piece (Grated)
  • Onion: 1/2 (Sliced)
  • Ginger Sauce: 2 tbsp Soy Sauce, 2 tbsp Mirin, 1 tbsp Sake, 1 tsp Sugar mixed with the grated ginger.
  • Shredded Cabbage: For serving
  • White Rice: Essential!

(4) Instructions

1. The Magic Soak: Pour the Dashi into a shallow tray. Submerge the sliced pork in the Dashi and wait for 10 minutes. The meat will literally "drink" the Dashi!

2. Prepare the Sauce: Grate the fresh ginger—it warms your body and smells fantastic! Mix it with your soy sauce, mirin, sake, and sugar.

3. The Sizzle: Heat a little oil in a pan. Add the pork slices. Listen to that beautiful ASMR sizzling sound!

4. Caramelize & Coat: Once the meat changes color, add the sliced onions. Pour the ginger sauce over everything. Let it bubble perfectly until the sauce covers the meat perfectly.

5. Plate and Enjoy: Serve the super soft pork next to fresh green cabbage. The cabbage makes the dish healthy and refreshing. Don't forget your white rice!
