Panko (Japanese Breadcrumbs)
What is it?
Large, airy crumbs made from crustless white bread. They fry light and loud. They also soak up less oil than fine crumbs.
Substitution Guide
Homemade crumbs from sandwich bread
Pulse crustless bread into coarse bits. Dry them for 1 minute in the microwave.
Crushed cornflakes
They are very crunchy but brown fast. Fry 10C lower and watch the color.
Fine Italian dry breadcrumbs
The crumbs are tiny and dense. They make a hard, oily shell with no crunch.
