What is it?

A thick, dark soy sauce made mostly from soybeans. It uses little or no wheat. Many brands are gluten-free, but check the label.

Substitution Guide

✅ Best Substitute

Koikuchi soy sauce (not gluten-free)

It is thinner and a little saltier. Use a bit less for the same taste.

⚠️ Acceptable

Coconut aminos (gluten-free and soy-free)

It is safe for most allergy diets. It tastes sweeter, so cut back on sugar.

🚫 NEVER Use

Chinese dark soy sauce

It is thick with molasses and much sweeter. It adds color but the wrong flavor.

Sensory Profile

Deep, almost black, and slightly thick. Rich umami with a softer salt edge than koikuchi.
