Muscle is a bundle of wet threads

Raw chicken is about 75 percent water. The water sits inside long protein threads. Heat makes those threads tighten.

The squeeze starts near 60C

Around 60C, the threads begin to shrink. Past 70C, they squeeze hard and juice runs out. That is why a few degrees matter so much.

Why thigh forgives more

Thigh has more fat and more connective tissue. Both keep it moist at higher heat. Breast has little of either. So breast needs a thermometer most.
