Beni Shoga (Pickled Red Ginger)
What is it?
Thin strips of ginger pickled in plum vinegar. It is bright red, sharp, and salty. A small pile cuts the richness of gyudon.
Substitution Guide
Gari (pink sushi ginger)
Gari is also pickled ginger, but sweeter. Cut it into thin strips before using.
Fresh ginger soaked in rice vinegar
Soak thin strips with a pinch of salt for 30 minutes. The color stays pale.
Ground ginger powder
Powder has no crunch and no sourness. It only adds a dusty heat.
