Bring the broth to a boil. Add the onion. Simmer for 5 minutes until soft and see-through.

💡 Where the onion sweetness comes from

Raw onion already holds about 5% sugar. Its sharp smell hides that sugar. Heat breaks down the sharp compounds. After 5 minutes, you taste the sweetness underneath.

Add the beef and loosen it with chopsticks. Skim off the gray foam. Simmer for 2 to 3 minutes.

💡 What the gray foam really is

The foam is meat protein and blood set by heat. It tastes bitter and clouds the broth. Skim it within the first 2 minutes. After that, it breaks up and sinks back in.
