Firm Tofu (Momen)
What is it?
Tofu pressed in a cloth-lined box. It has a rough, dense surface. It holds its shape in frying and simmering.
Substitution Guide
Medium tofu, drained longer
It is a little softer than momen. Drain it 10 minutes more.
Silken tofu, well drained
It tastes smoother but breaks easily. Use a wide spatula to move it.
Extra-firm pressed tofu for stir-fry
It is dry and rubbery inside. It will not turn soft in broth.
