Homemade awase dashi

It takes 45 minutes but tastes cleaner. Make a batch and freeze it.

Low-sodium chicken broth

It adds savory depth. The taste is not Japanese, so use less.

🚫 NEVER Use

Western fish stock cubes

They carry herbs and a heavy fish smell. Miso soup stops tasting Japanese.
