Instructions
Boil the eggs for 10 minutes, then cool and chop them. Soak the minced onion in water for 5 minutes. Squeeze it dry.
Mix the eggs, onion, and chopped dill pickles with mayonnaise. Add a pinch of pepper.
Mix the eggs, onion, and chopped rakkyo with Kewpie mayonnaise. Stir in the parsley.
💡 Why tartar stays thick
Mayonnaise is oil held in tiny drops by egg yolk. Wet add-ins can loosen it. Squeezing the onion dry keeps it thick. Chill it for 15 minutes while you fry.
My tartar always turns runny.
Squeeze the onion. Hard. Then squeeze again.
So the water was the problem, not the mayo.
Warm the vinegar, soy sauce, sugar, and chili in a small pan. Stop when the sugar melts.
Season the chicken with salt and pepper. Coat it in flour, then dip it in beaten egg.
Fry at 170C for 5 to 6 minutes, turning once, until golden.
Lift the chicken straight from the oil into the warm vinegar. Turn it once, about 10 seconds per side.
💡 Hot chicken drinks the vinegar
Fresh from the oil, the crust is full of steam. As it cools, the steam turns back to water and leaves space. That pulls liquid into the tiny holes. Dunk within 30 seconds of frying.
Won't the crust go soggy?
The egg coat is soft by design. It holds the vinegar.
So this crust is meant to soak, not crunch.
Slice the chicken. Spoon the tartar sauce over the top. Serve with shredded cabbage.

It was an old word for foreign traders from the south. Dishes with vinegar and chili often carry the name.
Why use an egg coating instead of panko?
The soft egg coat soaks up the sweet vinegar. A panko crust would just turn soggy.

Yes. Keep it in the fridge and use it within 2 days.
