Waiting is not wasted time
Read the whole recipe first and find the waiting blocks. Then decide what you will do during them. That is the difference between a long cook and a stressful one.
I make the tare the night before. On the day, the hard part is already done.
Ramen shops keep a tare pot running for years. New tare goes into the old pot. The oldest layer never fully leaves.
Split the recipe across two days. Do the resting steps at night and the cooking steps the next morning.
