Instructions
Microwave the mirin in a mug for 30 seconds. Let it cool.
Boil the mirin in a small pan for 30 seconds. Let it cool.
Squeeze the lemons and orange. Peel one 5 cm strip of lemon zest, with no white part.
💡 The smell is in the peel
Lemon juice is about 5% acid. It brings the sour taste but little smell. The fragrant oils sit in tiny pockets in the peel. One strip of zest gives the yuzu-like lift.
Why add orange at all?
Lemon alone is too sharp. Orange rounds it off.
And the peel does the smelling.
Squeeze the yuzu or sudachi. Add one small strip of yuzu peel.
Pour the soy sauce and citrus juice into a clean jar. Add the mirin and rice vinegar. Stir well.
💡 Equal soy and citrus is the base
Use 100 ml of soy sauce and 100 ml of juice. Salt and umami make sour taste feel softer. So the mix tastes rounder than either one alone. Add juice for sharper, soy for milder.
One to one. Then taste and adjust.
The vinegar is so small. Does it matter?
It keeps the sour steady when the fruit is sweet.
Chill for at least 1 hour. Take out the zest after 1 day.
Add the kombu and bonito flakes. Chill for 1 day, and up to 3 days.
💡 Cold steeping pulls clean umami
In the fridge, kombu and bonito give up umami slowly. There is no heat, so no slimy or bitter notes. After about 24 hours the flavor is deep. Past 3 days, the kombu turns slippery.
Can I skip the kombu and bonito?
Yes. It will taste thinner, but still good.
So the one-day wait buys depth.
Strain out the kombu and bonito through a fine sieve.
Use it as a dip for gyoza or hot pot. It also suits grilled fish and salad.

Can I use bottled lemon juice?
You can, but it tastes flat. Add a strip of fresh zest to bring back the smell.
