Instructions
Wipe the kombu lightly with a damp paper towel. Keep the white powder on it.
Put the kombu in a jar with 1 liter of cold water. Close the lid. Leave it in the fridge for 8 to 10 hours.
💡 Why cold water still gets the flavor out
Umami from kombu dissolves easily in water. Cold water works slowly, so it needs about 8 hours. The slimy part stays locked in the kelp. You get a very clear, soft stock.
No stove at all? That feels like cheating.
Time does the work. The fridge keeps it safe.
So I set it up at night and use it at breakfast.
Put the kombu in a pot with 1 liter of soft water. Soak it for 30 minutes.
💡 Why a soak comes before the heat
Dry kombu is hard, like cardboard. In 30 minutes it softens and opens up. Now the umami can move out fast. Soft water keeps the stock clear.
Give the kombu a head start in the water.
Can I use tap water for this soak?
If it is hard, use a filter jug first.
Lift out the kombu with chopsticks. The dashi is ready to use.
Heat the pot on low for about 15 minutes. Stop when a thermometer reads 60C.
💡 Why 60C is the magic line for kombu
At 60C, umami leaves the kombu quickly. The slimy fiber stays inside. Above 80C, that fiber melts into the water. The stock turns thick and smells too strongly of the sea.
Why not go faster on high heat?
High heat pulls out slime too.
So slow heat keeps the good part and leaves the rest.
Keep the water between 55C and 65C for 1 hour. Move the pot off the heat if it climbs too high.
💡 Why the kombu needs a full hour
Kombu is thick, so umami moves out slowly. Most of it comes out in the first 60 minutes. After that, the gain is small. A longer wait mostly adds a grassy note.
Set a timer for one hour. Then walk away.
Do I stand and watch the thermometer the whole time?
Check it every 15 minutes. That is enough.
Take out the kombu. Do not let the pot boil at any point.
💡 Want stronger vegan umami? Add shiitake.
Kombu gives glutamate. Dried shiitake gives guanylate. Together they taste much stronger than either alone. Soak 2 dried shiitake with the kombu next time.
Kombu alone tastes a little quiet to me.
Add a plant partner. Dried shiitake works best.
Still vegan, and twice as deep. I like that.
Use the dashi now, or chill it in a closed jar. It keeps for 3 days in the fridge.
FAQ
Is kombu dashi really free of fish?
Yes. It is only kelp and water. Be careful with kombu dashi powder. Many brands add bonito extract.
What can I do with the used kombu?
Slice it thin. Simmer it with soy sauce, mirin, and sugar until glossy. This is kombu tsukudani, a rice topping.
I have no thermometer. What should I do?
Make the cold-brew version instead. Or heat on low for 15 minutes. Take out the kombu before tiny bubbles appear.
What kind of kombu should I buy?
Look for thick, dark pieces labeled for dashi. Rishiri and Ma-kombu are best for stock. Skip snack kombu with vinegar or seasoning.
Can I freeze kombu dashi?
Yes. Pour it into an ice cube tray. Use the cubes within about 2 weeks.
