Instructions
Cut the chicken, carrot, and potatoes into 3 cm chunks. Slice the onions thin.
Heat the oil in a heavy pot over medium heat. Cook the onions for 10 minutes. Stop when the edges turn light brown.
💡 Ten minutes turns sharp onions sweet
Raw onions taste sharp from sulfur compounds. Heat breaks them down in about 10 minutes. Then the natural sugar comes forward. The light brown edges add a toasty base note.
Can I skip this and just boil everything?
You can. But the curry will taste thin.
So the onions build the body first.
Add the chicken and cook until the outside turns white. Add the carrot, potatoes, and 700 ml water. Boil, skim the foam, then simmer 15 minutes with the lid ajar.

Butter coats each bit of flour. So the flour spreads out and does not clump. In hot liquid, the starch swells and thickens it. Cook it past 8 minutes, and it thickens less.

What happens if it gets dark brown?
More flavor, but a thinner curry. Stop at peanut butter color.
Turn off the heat. Break the roux blocks into the pot. Stir until they melt with no lumps.
💡 Why the heat goes off before the roux
A roux block is flour, fat, and spice. In boiling liquid, its outside thickens too fast. That skin traps dry powder inside as lumps. Off the heat, the block melts in about 2 minutes.
The box says to turn off the heat. Is that important?
