Instructions
Put the ketchup and Worcestershire sauce in a small bowl. Add the soy sauce and sugar.
Toast the sesame seeds in a dry pan on medium heat. Give it about 2 minutes. Stop when they start to pop.
Microwave for 20 seconds. Stir until the sugar melts.
💡 Why ketchup and Worcestershire work
Bottled tonkatsu sauce is a thick, fruity cousin of Worcestershire. Worcestershire brings vinegar, spice, and anchovy umami. Ketchup adds tomato umami, sugar, and body. A 3 to 2 mix lands close.
Ketchup on tonkatsu sounds strange.
Taste it mixed. It turns into a different sauce.
So the mix matters more than each bottle.
Tip the warm sesame into a suribachi or mortar. Grind until about half the seeds are broken.
💡 Grind right before you eat
Sesame seeds are about half oil. The roasted smell is locked inside each seed. Grinding breaks them open and releases it at once. Within minutes, much of that smell drifts away.
Grind it at the table. Not in the kitchen.
Is ground sesame from a bag the same?
No. Most of the smell left long ago.
Taste it. Add a little sugar for sweeter, or Worcestershire for sharper.
Pour the tonkatsu sauce over the sesame and stir. Put a dab of karashi on the side.
Dip each piece of cutlet into the sauce. Do not pour it over the whole plate.
💡 Dipping keeps the crust crisp
Sauce is mostly water. Poured over, it soaks into the crust within about 2 minutes. A quick dip wets only the part you are about to eat. The rest stays crunchy.
I always pour it on at home.
Then the last bite is soggy.

The Local sauce keeps 2 weeks in a jar in the fridge. Use sesame sauce the same day.

What is tonkatsu sauce made of?
It is a thick, fruity brown sauce. Most bottles use vegetables, fruit, vinegar, sugar, and spices. It is a thicker cousin of Worcestershire.
Is tonkatsu sauce the same as okonomiyaki sauce?
They are close. Okonomiyaki sauce is usually sweeter and thicker. Either works on a cutlet in a pinch.
Can I use pre-ground sesame?
You can, but it smells weaker. Warm it in a dry pan for 30 seconds first.
Is tonkatsu sauce gluten-free?
Many bottles are not. Check the label for wheat. For the Local version, use gluten-free Worcestershire and tamari.
