Balancing Fat, Salt, and Acid

Most flat dishes are missing one of three things. Fat, salt, or acid. Find the missing one.

Balancing Fat, Salt, and Acid

Core Concept

Fat carries aroma and coats the tongue. Salt lifts every other taste. Acid cuts through fat and resets the palate. A dish needs all three, but not in equal amounts.

Did You Know?

Japanese meals put the acid on the side, not in the sauce. Pickles do that job. That is why a rice bowl comes with them.

Taste the dish and name the gap

Take one spoon. If it feels heavy, add acid. If it feels thin, add salt. If it feels sharp and dry, add fat.

Add in small steps

Add half of what you think you need. Stir. Taste again. Most cooks overshoot on the first try.

Ryota says:

My teacher made me taste one broth twenty times in a single lesson. I finally heard what salt does to it.

Everything tastes vague Not enough salt Add a pinch and taste again
The taste hits hard and then vanishes Not enough fat Stir in a small piece of butter or oil
