Roll thin sheets of egg one by one into a single log. Each wet layer glues onto the last.

Common Failures

Waiting too long leaves dry layers that do not stick. Skipping the oil makes the egg tear.

Pour a thin layer of egg and let it half set. Roll it toward you. Push the roll back and oil the pan. Pour the next layer under it too.

Each new layer glues onto the roll while it is still wet. Thin layers cook fast and evenly. The result is a neat spiral.
