(2) Ryota's One-Point Advice: The Science of "Umami Synergy"
Most people think Bonito Flakes (Katsuobushi) are only for making soup stock (Dashi). But scientifically speaking, they are the ultimate flavor booster for your salad.
Why? It’s all about "Umami Synergy."
Caesar salad uses Parmesan cheese, which is rich in Glutamate. Katsuobushi is rich in Inosinate. When these two specific Umami components meet in your mouth, the flavor intensity doesn't just double—it jumps to 7 or 8 times stronger!
- Why not Bacon? Bacon is delicious but can be oily. I use "Honkarebushi" (Bloodline removed) for this recipe. It has zero fishy smell and adds an elegant, smoky aroma that cuts through the creamy dressing perfectly.
This is a true fusion of Italian and Japanese logic. Trust me, once you try this "Umami Bomb," you can't go back to normal croutons!

(3) Ingredients (Serves 2)
- Romaine Lettuce: 1 head (Washed and torn)
- Caesar Dressing: 3-4 tbsp (Your favorite brand or homemade)
- Parmesan Cheese: 2 tbsp (Grated)
-
Katsuobushi (Bonito Flakes): 1 pack (Approx. 2-3g)
*Chef's Tip: Use Honkarebushi for the best aroma! - Onsen Tamago (Poached Egg): 1 (Optional, for extra creaminess)
- Black Pepper: To taste
(4) Instructions
1. Prep the Greens: Wash the Romaine lettuce thoroughly and dry it well. Water is the enemy of a good dressing! Tear into bite-sized pieces.
2. Dress It Up: In a large bowl, toss the lettuce with the Caesar dressing. Coating every leaf evenly is key.
3. Plate & Egg: Place the salad on a plate. If you have a poached egg (Onsen Tamago), place it gently in the center.
4. The Magic Moment: Sprinkle the Parmesan cheese, and then—the star of the show—generously scatter the Katsuobushi on top.
5. Finish: Add freshly cracked black pepper. Mix it right before you eat to enjoy the dancing aroma of the Bonito flakes!
