Name the gap, then fix it
Heavy means add acid. Vague means add salt. Sharp means add fat. Flat in a deeper way usually means add umami.
Taste with a clean spoon every time. A used spoon carries the last taste and it will fool you.
Salt suppresses bitterness more strongly than sugar does. A pinch of salt in coffee is an old trick built on that.
Season in three small steps rather than one large one. You cannot take salt back out of a pot.
