What is it?

Young sprouts of mung beans. They are crisp, juicy, and very cheap. In Japan they are the classic ramen vegetable.

✅ Best Substitute

Shredded Cabbage

It stays crisp in hot soup and tastes mildly sweet. Cut it thin so it cooks in 1 minute.

⚠️ Acceptable

Soybean Sprouts

They are larger, with a nutty bean head. Cook them 2 minutes longer to lose the raw bean taste.

🚫 NEVER Use

Alfalfa Sprouts

They are thin and go limp at once in hot soup. They also taste grassy.
