Common Failures

Boiling after adding miso removes the smell and leaves only salt. Dropping miso straight in leaves lumps at the bottom of the bowl.

Do this

Turn the heat off. Put the miso in a small strainer and lower it into the pot. Press it through with the back of a spoon.

Why it works

Miso aroma comes from light molecules made during fermentation. Boiling drives them into the air. Off the heat, they stay in the bowl.

When to skip it

Skip the strainer for a thick braise. There you want the miso to cook in and thicken the sauce, so add it earlier.
