Hot oil burns minced garlic in about ten seconds and the whole dish turns bitter. Wet aromatics splatter and cool the pan.

Do this

Put the minced aromatics into cold oil. Turn the heat to low. Wait until small bubbles form and the smell rises. That takes about one minute.

Why it works

Aroma compounds dissolve into fat, not water. Warming them in oil moves the smell into every drop of the sauce later.

When to skip it

Skip it when you want a fresh sharp bite. Raw grated garlic added at the end gives a completely different effect.
