Tilt the pan down to about thirty degrees. Hold the handle near the base. Tap the top of the handle with your other fist, just past the food.

Why it works

The tap sends a small shock along the pan. The omelette lifts, slides forward, and folds against the curved edge. Gravity does the rest.

Skip it if the surface is still wet. A wet omelette sticks and tears instead of sliding.
