Instructions

✨ SHARED
Step 1

Finely chop the onion. Cut the chicken into small 1cm pieces. Crack the eggs into a bowl and beat thoroughly until whites and yolks are fully combined.

✨ SHARED
Step 2

Heat oil in a pan over medium-high heat. Sauté chicken and onions until the onions are translucent and chicken is cooked.

💡 The Maillard Foundation

Sautéing the aromatics and meat first creates savory compounds through the Maillard reaction. This is your flavor base before the ketchup goes in.

👨‍🍳 Ryota

Brown the onion and meat before the rice.

🔬 Shunta

The rice will cook them anyway. Why bother?

👨‍🍳 Ryota

Browning makes new flavor. Steaming does not.

✨ SHARED
Step 3

Push ingredients to the side. Add ketchup directly to the empty space in the pan. Fry the ketchup for 30 seconds until it bubbles and darkens slightly, then mix with the chicken and onions.

💡 Fry the Ketchup, Not the Rice

Heating ketchup directly on the pan vaporizes volatile acids and caramelizes sugars. If you mix it with rice first, the rice absorbs the moisture and gets mushy.

👨‍🍳 Ryota

Cook the ketchup alone for thirty seconds.

🔬 Shunta

I always mix it straight into the rice.

👨‍🍳 Ryota

Then it stays sour. Heat first and it turns sweet.

✨ SHARED
Step 4

Add the warm rice. Use a cutting motion with your spatula to separate the grains and coat them evenly. Shape the rice into a football oval on a plate.

✨ SHARED
Step 5

In a clean non-stick pan, melt butter over medium-high heat. Pour in half the beaten eggs. Stir quickly with chopsticks while shaking the pan to create small curds.

💡 The Coagulation Window

Eggs set rapidly. By stopping when the top is runny, carryover cooking will finish the egg perfectly on the hot rice without drying it out.

🔬 Shunta

The top of my omelet still looks wet.

👨‍🍳 Ryota

Good. Take it off the heat now.

🔬 Shunta

The rest of the heat finishes it on the rice.

FAQ

Q Why is my ketchup rice mushy?

You likely added ketchup after the rice. Always fry the ketchup in the pan first to evaporate excess water before mixing in the warm rice.

Q My omelet keeps tearing. What's wrong?

Your pan might not be non-stick enough, or it wasn't hot enough when you poured the eggs. Ensure the butter is bubbling before adding the eggs.

Q Can I use leftover cold rice?

Yes, but you must heat it in the microwave first. Cold rice clumps together and requires too much force to separate in the pan, leading to a gummy texture.

Q What if I can't fold the omelet like the Authentic version?

Don't worry! You can easily do the "Tampopo" style—just slide the semi-cooked flat omelet directly over the rice like in the Local version.
