Common Failures

Skipping the salt step leaves the inside bland and the brine watery. Thick pieces never take the flavour past the surface.

Do this

Cut the vegetables thin. Rub them with a little salt and wait five minutes. Squeeze the water out. Mix the brine and pour it over.

Why it works

The salt step empties the cells of water. Empty cells take the brine in fast. Without it, the brine sits on the outside only.

When to skip it

Skip it for anything you want to keep more than a week. That needs a stronger brine and a proper fermentation.
