Scientifically speaking, here is the magic formula:
Chicken (Inosinate) + Dashi (Glutamate) = Flavor Explosion!
When these components meet, the flavor intensity doesn't just add up—it multiplies, becoming 7 to 8 times stronger!
This is why this Shio (Salt) Ramen feels incredibly rich and satisfying even though it uses very little salt. In this recipe, salt isn't the main flavor; it acts as a "highlighter" to bring out the delicate notes of the Dashi. Understanding this logic will transform your cooking from "salty" to "deeply flavorful."

(3) Ingredients (Serves 2)
To enjoy the delicate Umami, we use a "Double Soup" method combining chicken broth and authentic Dashi.
- Dashi Stock: 400ml (Check our Basic Dashi Guide)
- Chicken Broth (Chintan): 400ml (Clear soup simmered from chicken bones and aromatics)
- Ramen Noodles: 2 servings (Thin, fresh noodles work best)
- Sea Salt: 1 to 1.5 tsp (Adjust slowly to keep it delicate)
- Toppings: Chashu pork, soft-boiled egg, and chopped green onions
(4) Instructions
1. Combine the Soups: Mix the Dashi and chicken broth in a pot. Gently warm it to about 80°C (176°F). Never let it boil! Boiling destroys the sophisticated aroma of the Dashi.
2. The Salt Highlighter: Add the sea salt gradually. You are looking for the exact moment where the Umami becomes "vivid" without tasting salty.
3. Prep the Noodles: Boil the noodles in a separate pot. Once done, drain them thoroughly (just like my gesture in the video!) so you don't dilute the soup.
4. Serve: Pour the soup into pre-warmed bowls, add the noodles, and arrange your toppings beautifully.
