Koji mold makes enzymes. Protease cuts protein into amino acids, and many of those taste of umami. Amylase turns starch into sugar. Both happen slowly at room temperature.

Did You Know?

Shio-koji became a home staple in Japan around 2011. It is only rice koji, salt, and water. Older cooks had used the same idea for pickling for generations.

What the enzymes do

Protease loosens the meat and makes amino acids. Amylase makes sugar. Sugar browns faster, so koji meat colors early.

Time and temperature

Two hours changes the taste. Overnight changes the texture. More than two days and the meat turns soft and pasty.
