Instructions
Make one batch of sushi rice from 2 cups of raw rice. Cover it with a damp cloth. Let it cool to body temperature.
Cut the cucumber into small cubes. Shred the crab sticks by hand. Thaw the cooked shrimp and pat them dry.
Slice the soaked shiitake and cut the carrot into thin sticks. Simmer them in the soaking liquid with soy sauce, sugar, and mirin. Cook about 10 minutes until the liquid is almost gone.
💡 Why the toppings must cook almost dry
Wet toppings leak into the rice and make it soggy. Cooking off the liquid pushes the flavor into the vegetables. After about 10 minutes, only a glaze remains. Then the rice stays firm and bright.
Can I just drain the liquid instead?
You can. But the flavor goes down the sink.
So cook it in, do not pour it out.
Fold the simmered vegetables into the rice with a cutting motion. Do not mash the grains.
Beat the eggs with the sugar, salt, and starch water. Oil a pan lightly over low heat. Pour a thin layer, cook 1 minute, flip for 10 seconds. Make 3 or 4 sheets.
💡 A pinch of starch stops the tearing
A thin egg sheet is weak. It tears when you flip it. Starch swells in the heat and fills the gaps between proteins. Just 1/2 tsp for 3 eggs makes it bend, not break.
Low heat, and do not skip the starch.
Mine always tear at the flip.
Starch fixes that. Low heat keeps the color yellow.
Stack the egg sheets and roll them up loosely. Slice across into threads about 2 mm wide. Fluff them apart with your fingers.
Spread the rice in a wide dish. Scatter the egg threads, cucumber, crab, and shrimp on top. Finish with torn nori.

💡 Why chirashi can sit out for a party
The vinegar makes the rice acidic. Most bacteria grow slowly in acid. That is why sushi rice is served at room temperature. Still, eat it within 2 hours and chill the raw toppings.

No. Two hours is the limit.

Can I use raw fish for chirashi?
Yes, but only fish sold for raw eating. Keep it cold until serving. The Local version skips raw fish on purpose.

Make the rice and simmered vegetables a few hours ahead. Keep the rice covered at room temperature. Add the toppings just before serving.
