Japanese Seasons Course

The four seasons of Japan greatly influence its cuisine. A characteristic feature is that even the same dish changes its color and flavor with each season. In spring, the colors evoke cherry blossoms and fresh greenery; summer features vibrant vegetables and refreshing presentation; autumn brings warm colors reminiscent of autumn leaves; and winter centers around heartwarming hot dishes. By incorporating seasonal ingredients in their prime, the flavor of the dishes is further enhanced, and the beauty of the season is expressed visually. Japanese cuisine values this sense of seasonality, allowing you to experience the four seasons through taste and sight.

Izakaya Cooking Course

Discover the heart of Japanese social dining with our online Izakaya cooking class! Learn what an Izakaya is – a casual Japanese pub perfect for enjoying drinks with a variety of tasty small plates ('otsumami').

From your own kitchen, let's have fun cooking popular Izakaya classics together, like crispy Karaage (Japanese fried chicken) and fluffy Dashimaki Tamago (rolled omelet). Capture the relaxed Izakaya vibe as you master easy-to-follow recipes and tips for delicious home cooking. We'll even get to taste our delicious creations right after cooking!

Many Japanese Dishes from One Ingredient Course

It's amazing how much one ingredient can transform! This is a course where you learn the deep wisdom of 'tsukaikiri' (using ingredients completely/resourcefully) and the techniques for 'henka' (transformation) in Japanese cuisine.

Each session, we select one seasonal theme ingredient (examples: daikon radish, tofu, mushrooms, seasonal fish, etc.). You'll experience the surprise as it changes form into main dishes, side dishes, soups, and sometimes even rice dishes or preserved staples ('joubisai').

Through various cooking methods such as simmering, grilling, steaming, dressing, and pickling, you will practically learn ways to maximize the potential held within a single ingredient.

We carefully teach you, right from the basics, how to make classic home-style dishes likeNikujaga(meat & potato stew) andShogayaki(ginger pork), along with delicious rice and miso soup.
