Substitution Guide
Awase Miso (Mixed Miso)
Slightly darker and saltier but offers a highly complex and forgiving flavor profile.
Red Miso (Aka Miso)
Much saltier and bolder with deep earthy fermented tones; use 20% less to balance.
Hatcho Miso (Red)
Hatcho miso is much darker and stronger. It buries the delicate dashi in a light soup.
