Key Points

Start from cold water, not boiling. Rinse every piece by hand between the two boils. Add aromatics to the second pot only.

Common Failures

Adding ginger to the first pot wastes it, since that water gets thrown away. Skipping the rinse leaves the scum on the meat.

Do this

Cover the meat with cold water and bring it to a boil. Drain and rinse each piece under running water. Refill with fresh water, ginger, and green onion, then simmer.

Why it works

Blood proteins turn into grey scum. That scum sticks to the meat as the water drains. Rinsing is the only way to take it off.

When to skip it

Skip the second boil for chicken bones. One round is enough and a second one washes the flavour away.
