Surface Dryness Principle

A wet surface cannot brown. The pan spends all its heat boiling that water away.

Surface Dryness Principle

Core Concept

Water boils at 100C and holds the surface there. Browning needs about 140C. So the surface must go dry first. Every drop of water delays the color.

Did You Know?

Japanese cooks salt fish thirty minutes before grilling. The salt pulls water to the surface. They wipe it off, and the skin crisps in half the time.

Why the pan goes quiet

A loud hiss means water is leaving. When the sound softens, the surface is dry. That is the moment color starts.

Three ways to dry a surface

Pat it with paper. Salt it and wipe after thirty minutes. Or rest it uncovered in the fridge overnight. All three work.

Ryota says:

I dry chicken skin in the fridge overnight now. No cover. It looks sad. It cooks beautifully.

🛠 Cause & Solution Matrix

❌ Symptom 🔍 Cause 💡 Solution
The pan hisses loudly the whole time The surface is still wet Wait, or start again with a dry surface
The skin is rubbery, not crisp Water stayed under the skin Salt it and rest it uncovered
The color is uneven The surface dried unevenly Wipe the whole surface before cooking
