Season for the rice, not the plate
Japanese main dishes taste slightly strong on their own. That is deliberate. Eaten with plain rice, the balance lands correctly.
Rinse rice until the water runs almost clear, then let it soak for thirty minutes. Both steps matter more than the brand.
Japanese short grain rice absorbs about twenty percent more water than long grain. The ratio from another cuisine will not work.
Let cooked rice rest with the lid on for ten minutes. Opening it immediately leaves the top layer wet and the bottom dry.
