Dice the ham or chashu into 1 cm cubes. Slice the green onion thin. Beat the eggs in a bowl.

💡 Why egg-coated grains will not clump

Raw egg spreads over each grain like a thin paint. In the pan, it sets near 70C into a dry shell. Sticky starch stays sealed inside. So even a weak stove gives separate grains.

Cold rice pulls heat out of the pan fast. Two servings at once can drop the surface below 100C. Then water stays put and the rice steams. One serving keeps the pan hot enough to sizzle.

Egg in hot oil sets in about 10 seconds. The rice must land while the egg is still wet. Then the egg wraps each grain. Late rice meets firm egg and stays bare.

The bare pan edge is far hotter than the rice. Soy browns there in 2 or 3 seconds. Its sugars and proteins turn toasty. Poured on the rice, it only makes the grains wet.
