Instructions
Rinse the rice in cold water. Swirl, then pour the water off. Repeat 3 or 4 times until it is almost clear.
Put the rice in the rice cooker. Add water to the sushi line. No sushi line? Use 400 ml. Soak for 30 minutes.
Put the rice and 400 ml water in a heavy pot. Add the kombu. Soak for 30 minutes.
💡 Why sushi rice gets less water
Plain rice usually cooks with about 1.2 times its volume in water. Sushi rice uses about 1.1 times. The vinegar mix adds 60 ml of liquid later. Firm grains can take it in without going soft.
Less water sounds like hard rice to me.
It is firm on purpose. The vinegar finishes it.
So the vinegar counts as part of the water.
Cook on the normal white rice setting. Let it rest 10 minutes after the beep.
Bring to a boil over medium-high heat. Take out the kombu. Cover and cook on the lowest heat for 12 minutes. Turn off the heat. Rest 10 minutes with the lid on.
Mix the vinegar, sugar, and salt in a mug. Microwave for 20 seconds. Stir until clear.
Warm the vinegar, sugar, and salt in a small pan. Keep the heat low. Stir until clear. Take it off before it bubbles.
💡 Why the vinegar never boils
Warmth helps the sugar and salt melt fast. The sour smell of vinegar leaves easily with heat. A hard boil leaves the mix flat and dull. Stop when the pan feels hot, around 60C.

Why not boil it just to be safe?
Boiling burns off the part you want.
Wet a wide wooden tub or a large bowl. Wet the rice paddle too. Wipe both so they are just damp.
Tip the hot rice into the tub at once. Pour the vinegar over the paddle. Spread it over the whole surface.
💡 Hot rice drinks the vinegar, cold rice does not
Cooked starch is soft and open while hot. Above about 60C, it pulls the vinegar inside. As it cools, the starch tightens again. Cold rice leaves the vinegar sitting on the surface.
Can I cook the rice early and mix it later?
No. Mix within 5 minutes of cooking.
So the heat is what pulls the flavor in.
Slice through the rice with the paddle held sideways. Lift and fold from the bottom. Fan the rice at the same time. Stop after about 5 minutes, when it looks glossy.
💡 Why you cut instead of stir
Stirring rubs grains together and breaks them. Broken grains leak starch and turn sticky. Fanning pulls off extra steam in about 5 minutes. The surface dries a little and starts to shine.
It feels slow. Can I just stir it fast?
Fast stirring makes paste. Slice and fold.
And the fan does the drying for me.
Cover with a damp cloth. Keep it at room temperature. Use it the same day.
💡 Why sushi rice hates the fridge
Cooked starch slowly turns hard and dry as it cools. This change is fastest at fridge cold, near 4C. Rice from the fridge turns hard by the next day. Room temperature keeps it soft for the day.
Leftover sushi rice goes in the fridge, right?
No. The fridge makes it hard and dry.

FAQ
Can I use long-grain rice like jasmine?
It will not hold together well. Long grains have less sticky starch. Use Calrose or another medium-grain rice.
Why is my sushi rice mushy?
There was too much water, or the rice was stirred. Use a little less water next time. Slice and fold. Do not stir.
Can I keep sushi rice in the fridge?
It turns hard in the fridge. Keep it covered on the counter for the day. For longer, wrap and freeze it. Warm it in the microwave before use.
Can I use store-bought seasoned rice vinegar?
Yes. It already has sugar and salt in it. Use about 70 ml and skip both. Taste and adjust.
How much sushi rice do I need for one roll?
A thin roll uses about 100 g. A thick roll uses about 200 g. This batch makes about 750 g.
